Who said that a healthy breakfast couldn't be easy? Well for those of you that skip this most important meal of the day, making these quick and easy muffins are sure to bring a smile and much needed boost before that traditional mid-morning crash... You know, the one that happens when the coffee wears off and you're watching the clock for lunch? Yeah, that one!
This blueberry muffin is packed with protein- over 3 grams per serving in the original recipe. If you follow my quick hack, you can double that amount to over 6 grams per serving! That's more than some so-called protein bars on the market (you have to look at the food label to catch this one). It is also low-fat for those keeping their figure in check. And yes, I do have a hack that makes this recipe very low fat and still tasty, because we all know- if it ain't tasty you ain't making it. Am I right?
Well let's get to cooking!
Blueberry Yogurt Muffins (original recipe)
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/3 cup sugar
1/4 cup unsweetened orange juice
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1 (8 ounce) carton vanilla low-fat yogurt
1 cup fresh or frozen blueberries, thawed
Vegetable oil cooking spray
1 tablespoon sugar
Combine first 5 ingredients in a large bowl; make a well in the center of the mixture. Combine orange juice and the next 4 ingredients; stir well. Add to dry ingredients, stirring until just moistened. Gently fold in blueberries.
Divide batter among 12 muffin pans coated with cooking spray; sprinkle 1 tablespoon sugar evenly over muffins. Bake at 400 degrees for 18 minutes or until golden. Remove from pans immediately; let cool on wire rack. Yield: 1 dozen.

Fat 3.4g (Saturated Fat 0.7g)
